Ingredients
crust:
- 2 c. Chocolate Wafer Cookies
- 3 TBSP Dairy-free Butter Alternative
filling:
- 1 1⁄4 c. So Delicious Vanilla Coconutmilk Yogurt Alternative
- 3⁄4 c. Peanut Butter
topping:
- 1 c. So Delicious Cocowhip
- 2 c. Dark Chocolate Chips
- 2 TBSP Coconut oil
- Chocolate Peanut Butter Cups (optional)
Directions
- Make the crust: Pulse chocolate wafer cookies in a blender until they are small crumbs. Combine chocolate wafer cookies with melted butter alternative and press the mixture into a pie pan. Cool in the refrigerator for 10 minutes while making the peanut butter filling.
- Make the filling: Combine Vanilla Yogurt Alternative and peanut butter in a blender or food processor, and blend until mixture is smooth.
- Top your pie: Melt coconut oil and 1 cup dark chocolate chips and allow to cool slightly. Pour chocolate over the pie and let cool for an additional 10 minutes. Top with a generous layer of Cocowhip. Garnish with more chocolate chips and peanut butter drizzle. Option to add peanut butter chips and cut up chocolate peanut butter cups.
