Ingredients
Crepes
- 2 large eggs
- 1 3⁄4 c. So Delicious Unsweetened Coconutmilk
- 1 c. all-purpose flour
- 1⁄4 c. granulated sugar, divided
- 1⁄4 tsp. fine sea salt
- 2 tsp. lemon juice
- Coconut oil, for frying
Toppings:
- So Delicious Vanilla Coconutmilk Yogurt Alternative
- Lemon zest
- Fresh berries
Directions
- Make sure that all of the ingredients are at room temperature, then combine them in a blender at a medium speed until the batter is smooth.
- Heat your pan over medium heat and brush it with a small amount of coconut oil. Make sure it is a very thin layer.
- Measure out ½ cup of batter at a time and pour it into the hot pan. Immediately begin to rotate the pan, to evenly spread the batter.
- Allow the pancake to cook for 2-3 minutes on the first side. If it begins to rip when you try to flip, give it a little longer.
- Flip the crepe and give it another 1-2 minutes on the second side.
- Add your toppings of choice and enjoy!
